(Red endive; Italian chicory) This radicchio is the oldest type grown in Italy, going back at least 500 years. Sown in July or August, it is harvested beginning in October and continuing through the winter. As temperatures drop the leaves turn a beautiful red with white midribs. In the Treviso area of northeastern Italy, plants are often dug up and forced at close to freezing temperatures under black cover to produce the much sought after tender loose red heads at Christmas time. The crisp, crunchy texture, and slightly bitter taste, are absolutely divine in any green salad.
