Indispensable seasoning spice native to Central America and Mexico. Originally discovered in the search for valuable spices in the New World, the Spanish called it “pimenta,” or pepper, in the hope that it would be a substitute for black pepper. But the flavours and scents of allspice are more subtle and complex than that, reminiscent of a combination of cinnamon, cloves and nutmeg. When dried, the whole fruit of the allspice tree will remain useful for over two years, producing an aromatic, flavourful powder for addition to baked goods and meat dishes.
