True cinnamon from Sri Lanka, the former Ceylon. Cinnamon is the bark of an evergreen tree related to bay laurel. The dried bark is the popular spice used in desserts, breads, and cakes. This form of cinnamon has a thinner bark and a more delicate flavour than the cassia form of cinnamon.
