Mace is the aril, or membrane, between the stone and the pulp of the nutmeg. When fresh it is blood red, turning a deep golden orange when dried. Pungent and refreshing, mace is used to flavour savoury dishes. The lacey dried arils are referred to as blade mace, used to help weak digestion, nausea and vomiting. Mace should be used sparingly to avoid possible intoxication.
