Black mustard is the variety that mustard lovers insist makes the best ground condiment with the strongest flavour. Black is also preferred in South Asian curries and dosas. Brown mustard has largely replaced the black variety in commerce because it is easier to harvest using mechanized equipment. The colours of the seeds of black and brown are actually very similar; the main difference in the seeds is the size: black mustard seeds are about half the size of the brown seeds.
