In Spain this is the only sage used in cooking. It has smaller leaves, and stronger flavour and aroma than garden sage (S. officinalis). The oil is distilled and harvested commercially. It is also a popular antidiabetic used throughout Spain. Studies confirm that it is effective for blood sugar, lowering without affecting insulin levels.
