Amaranthus caudatus

This plant looks just as dramatic as it sounds! Highlighted by unusual drooping tails of deep crimson plumage that can reach up to 2 feet long! Butterflies and hummingbirds cant resist a visit. Sourced from tropical regions of America where was once a significant source of food for the Aztecs and still used for a variety culinary purposes today. Leaves are used like spinach. Interestingly enough, the seeds can be dried, cooked and eaten as oatmeal or ground into a gluten free flour substitute. Extracts have been studied for their antioxidant and antibacterial potential. Creative flower arrangers appreciate this variety for its unique appearance as it will retain their colour for about 2 months after cutting. Prefers full sun and tolerates a wide variety of soil types. Height 2-8 feet.
