Traditional Japanese green dating back to the Edo period. Lance-shaped leaves, produced in abundance, have a mild mustard flavour and are delicious in mixed salads and in stir fries and soups. Mibuna is regarded as a cold-season vegetable but is also heat-tolerant and doesn’t bolt during the warm season. Quick crop: matures in 40 days, but baby leaves can be harvested in as few as 20 days.
