If you are confused by the different types of peppers available (white, black, pink, mountain, szechuan, etc.) this is the book for you. Spice merchant Ian Hemphill tells us how to buy herbs and spices, how to store them, and how to use them. Also herb and spice mixes such as berbere, cajun, curry, herbes de provence, and more. A bible it is, but it’s more like porn for the gourmet!
