I am looking for an herb that will tenderize spare ribs.

I am not aware of any herbs that will tenderize spare ribs or any other types of meat. Usually it is acids that tenderize meat, in marinades for example. Use of vinegar, tomatoes, pineapple, lemon or lime juice or yogurt have a tenderizing effect. The flavour of herbs is often used in marinades to impart flavour. To tenderize spare ribs, I suggest boiling gently for about 50 minutes then applying sauce such as barbecue sauce and cook until browned.
