Are cilantro and dill interchangeable in recipes? If so how and if not why?

No they are not directly interchangeable but at times can be used for the same recipe, depending on what it is going with. For example, in a mayonnaise or sauce for fish or chicken (shrimp or scallops) you could use either...however, they would give a very different taste. Cilantro, or fresh coriander as it is also known, is typically used with hot, spicy cuisines such as Thai, Mexican and East Indian and gives those foods an authentic taste. If you like cilantro, go ahead and try it in recipes in the same amount as you would have used dill and see if you like it. Both are good with carrots, potatoes, tomatoes. Dill is great with beets, cabbage, green beans but I have not tried them with cilantro.
