Lavender Scones

I would like to prepare lavender scones but do not know how much lavender to add to a standard recipe and whether the lavender needs to be pretreated in any special way. I do have edible lavender on hand. Do I need to add other ingredients to enhance the lavender flavor?

Lavender flowers may be used fresh or dried. They do not need to be treated in any way for making scones but must be food grade (no pesticides, herbicides, etc.), which you say it is. Try adding about 1/2 tsp. to 1 tsp. (if not sure how strong you will like it, add smaller amount then adjust the next time if you wish more) of dried lavender to a recipe calling for 2 cups of flour. Lavender can become overpowering if too much is used. If using fresh lavender, try using about 1 tbsp. You may wish to try adding a bit of grated lemon rind. Serve scones with strawberry, peach or apricot jam, which also go well with lavender. Make a butter for spreading on scones by stirring lavender flowers into softened butter, stir in icing sugar or honey. Butter keeps for several months wrapped well and frozen.
