What herbs go best with fish and beef?

For fish my favourite herb is dill, but also try tarragon, chervil, chives, marjoram, basil or lemon thyme. Depends if there are aother flavours added as well such as tomatoes. You can put the herbs over the fish, add vegetables and wrap in parchment or foil and bake in the oven, or add hebs to a white wine sauce for a warm sauce or to mayonnaise for a cold sauce.

My book "Thyme in the Kitchen -- Cooking with Fresh Herbs" (available from Richters) has lots of great recipes for meats, fish and other dishes... for instance you might put herbs in the rice, potatoes or vegetables to go with meat or fish and not with the meat or fish itself. Try not to have herbs in too many dishes in a meal.
