Should horseradish be harvested at the end of the first season or left until the end of the second year?

It all depends on the size of the plant you started with in spring. In most cases the plant will be large enough to harvest the majority of the rhizome in the fall of the first year. However if the plant had a bad start or a poor growing season or has to contend with poor soil, you may have to wait until the second fall. Leave about 10 centimeters of the root with the growing tip and replant this after removing anything over this length. You will find that in future years any bits of root left behind in the soil will grow into plants themselves, so that in future years you won’t have to worry about having enough left for growth next year.- Just leave one or more plants undisturbed and just harvest the plants that you need. The undisturbed plants will do so well that you will have no worry about growth next year.
