When is the best time of year to cut sage for drying?

In general, if the leaves or whole above-ground parts of herb are used then the best time to harvest for drying is when the flowers are just coming into bloom. For many herbs, sage included, the essential oils reach their maximum potency as the plants reach the flowering stage.
