An evergreen tropical shrub native to the Mediterranean region and Middle East with seed pods that have a very similar flavour to chocolate, used as a healthy substitute for cocoa in baked goods, health foods and syrups! Naturally sweet without bitterness, theobromine or caffeine. High in antioxidants and also high in tannins which make it a remedy for diarrhea. Mucilaginous gum is used as a food stabilizer and also in technical applications such as paint, polishes, ceramics and adhesives. The term carat originated from the carob tree as the seeds were weighed against gemstones and gold in the ancient Middle East. As it is also known as the locust tree, it is thought that this is what was referred to as the “locusts” that John the Baptist survived on as he preached throughout the desert regions. As it is a tropical plant, it will need a sunny window or greenhouse to thrive! Does best in dry climates with cool winters, mild springs and hot summers. Can reach up to 60 feet in adequate conditions.
