Large figs have a deep green skin with minute white spots and luscious strawberry-red flesh. Figs are sweet and delicious fresh or dried. The first harvest (the "breba" crop) in summer is heavy, followed by a lighter second crop in fall. This variety, developed in California in 1920, is one of the so-called "San Pedro" figs that require a tiny fig wasp to pollinate the fruits of the second crop. The first crop does not need the wasp for ripening but the second crop does. This wasp is not present in most areas in North America, so the second crop does not usually develop to maturity. But an old French technique of applying vegetable oil (usually olive oil) with a toothpick to the small openings at the end of the immature fruits often spurs fruits to ripen without pollination. Why this works we do not know but some fig growers swear by it.
