This popular purple stripe garlic from the Republic of Georgia tends to produce two distinct sizes of bulbs: large multi-layered bulbs with inner cloves up to 7cm/2.5” and smaller single-layered bulbs that store even longer into the season. The flavour is complex and lingering when sautéed, baked or raw in salad dressing. Useful as a good mid-winter garlic, it peels easier after 4-6 months of storage. It is slower to emerge in spring and it matures a little later in the season as well. Highly productive. Also known as Shvelisi after the small village where it was found and then brought to America. 7-11 sharply pointed, bright pink cloves per bulb.
