(Banana shallot; Échalion) Grow shallots from seeds! Known in France as échalote cuisse de poulet, or "chicken thigh shallot", this elegant heritage variety came to the French province of Poitou years ago from Eastern Europe and has since become popular throughout the country. And no wonder: the elongated bulbs are sweet, juicy and fragrant, something of a cross between shallot and onion in taste, and are excellent raw, cooked or marinated. The bulbs average about three ounces each (70-90g), 2-5cm (1-2") in diameter and 8-12cm (3-5") long, with rosy-copper skin and a pinkish, almost white flesh. Try them in salads, soups, shallot vinegar, or as a compote served with cheese or cold meats. Also excellent caramelized. The leaves too can be used like green onions or chives. Unlike other shallots this unusual variety does not multiply by division but instead grows from seeds. Start indoors in February or March (or outdoors in warmer zones) for late summer or early fall harvest. Bulbs will store for months through winter. 150 days.
