French Thyme
Thymus vulgaris
Uses: Culinary/Medicinal/Aromatic/Industrial Duration: Perennial (hardy in zones 4-9)
When to Sow: Spring/Late Summer/Early Fall/Anytime Ease of Germination: Easy
(Summer thyme) One of our most popular varieties, with narrow leaves distinctly greyer and sweeter than the English variety, although not as pungent. Said to be one of the most flavourful of all the thyme varieties, preferred in French cuisine. Perfect for a kitchen garden bed or a windowsill. Produces pale lavender flowers. Plant in sandy, well drained soil in full sun. Thyme is typically low maintenance, but will need to be pruned to encourage a bushy growth. Sensitive to over watering, as thyme is susceptible to fungal diseases and root rot. Harvest in the morning, as concentrations of aromatic oils are highest at this time. Can be stored by freezing or drying. Height 20-45cm.
