Portuguese favourite used in the national dish, a soup called
. The large flat leaves, cut into thin strips, are thrown in with spicy sausage, onions, garlic, and olive oil. The leaves are sweet and mild flavoured, and they keep their shape and texture even when cooked. The white stems and leaf ribs become prominent and decorative in fall and quite tender and delicious in their own right. Unlike other kales, Tronchuda resists the summer heat very well and can be planted in spring for harvest throughout summer and fall.
