(Saltwort; Land seaweed) One of the oldest vegetables of Japan, traditionally used in sushi and salads, and it is served as a bed for fish and meat. The name means "land seaweed" and indeed it has a salty flavour and crispy texture that suggests seaweed but is easily cultivated on land. It can be cut into 5-8cm/2-3" lengths and eaten raw or steamed, or it can be blanched briefly in salt water. Serve with a little butter or oil for a wonderful treat. Very easy to grow. Sow outdoors anytime from spring to autumn. 30-60 days.
