Cousin to the green malabar spinach, with a similar taste but a more ornamental appearance, with its red stems tapering off to veins that create a striking contrast to its glossy green leaves. Although is not categorized as a true spinach, can be used just the same, similar in flavour and mildly reminiscent of Swiss chard! Produces an abundance of leaves that can be harvested young and used in salads, soups and stir fries and adds a crunch to sandwiches! Unlike true spinach, which is a cool weather herb, this variety prefers the summer heat and humidity. Start seeds 6 weeks before last frost or directly sow into fertile soil once overnight temperatures are suitable. Plant in full sun and provide structural support such as a trellis for it to climb. Make sure soil is continually moist to prevent it from going to flower, giving the leaves a bitter taste.
