(Roscano; Barba di Frate) Traditional seasonal vegetable from Italy, now trendy in high end restaurants in Europe and North America. The plant looks like chives but its long succulent leaves are crunchy with a mild salty flavour that is a bit bitter and a bit sour. In Italian it is known as "Barba di Frate" or "monk’s beard" because the Capuchin monks were fond of it. It grows wild along the coast but the monks were known for growing it in their gardens. Steamed or sauteed, and dressed with lemon and oil, it is commonly served with fish. Young leaves can also be added fresh to salads. Best sown outdoors as soon as the ground can be worked in spring. Easy to grow. 30 days.
