Absolutely stunning food plant! It is hard to believe that this plant grown for its grain can be this stunning visually. The large deep maroon flower heads are shaped like an elephant’s head, with a trunk-like appendage raised straight up in the air. Appearing in late summer, the elephant heads will produce as many as 50,000 seeds that are used like a cereal grain. The seeds can be milled into a gluten-free flour or cooked whole and eaten in place of rice and oatmeal. The leaves can be used as a cooked green like vegetable amaranth.
