(Italian chicory) Traditional deep red form of chicory from the Veneto region of Italy with distinctive elongated heads forming in autumn. As the late season weather cools and the heads develop, the flavour becomes mellower and less bitter. This selection is earlier and more compact than other varieties. Best sown in summer for late autumn harvest. Enjoy raw in salads, grill with olive oil, or throw them in risotto.
