I would like to know if there are any herbs which make good tasting home-made wine? Thanks

The most common way to incorporate the rich and varied flavours of herbs into wine is to flavour wine with herbs. These flavoured wines are used in cooking, adding flavour to foods while tenderizing and moisturizing at the same time.

There are many herbs that can be used. Some examples are garlic, basil, oregano, parsley, and chives.

There is an excellent book that explains how to make flavoured wines and how to use them. Janice Therese Mancuso’s "Herbed-Wine Cuisine: Creating & Cooking with Herb-Infused Wines" is available from Richters.
