Before ordering the sugar beet seeds, I would like to know how to make sugar out of them so I can decide if I want to take on the challange.

Each packet comes with the complete directions for making sugar. Briefly, the process involves grinding the fresh roots, boiling, adding milk of lime (calcium hydroxide mixed with water), cooking, and spinning in a juicer to separate the sugar from the molasses. You will need a grinder or slicer, an orange juicer, a percolator top and a large canning-size pot. Milk of lime (calcium hydroxide suspended in water) is available from pharmacies. From each large sugar beet you get about 1/2 cup of sugar, plus black-strap molasses.
