What is the ratio of dried herbs to fresh ones? I specifically want thyme, sage, rosemary, parsley.
Generally, use about 3 times as much fresh herb as dried. Exceptions: Rosemary, use the same amount as it does not shrink much when it is dried and has a strong flavour when fresh. Tarragon, use half the amount of fresh vs. dried as the flavour is more intense when dried.
