I use cilantro and oregano when making menudo. What is a good ratio to get the best flavor?
I will admit to not having made this soup and recipes I have seen for it use dried oregano (which had more intense flavour than fresh) and fresh cilantro (also known as fresh coriander leaves). How much you use will depend on how large a batch you are making. For approximately 8 servings, I would recommend adding about 1 tbsp (15 mL) dried oregano to the soup during cooking and add about 1/2 cup (125 mL) fresh chopped fresh cilantro just before serving. See how you like it and adjust to you own taste.
Note: Menudo is a spicy soup that is popular in Mexico and touted as a hangover cure. It is made from calf’s feet, tripe, green chiles, hominy and herbs, garnished with lime wedges, chopped onion and chiles and served with tortillas.
