I have heard that basil does not dry well, that freezing basil mixed with olive oil in ice cube trays is best. Is this true, and what is the ratio of basil to oil?

For your herb "cubes", puree leaves in food processor, drizzle in only enough oil to make a soft paste. Once cubes are frozen, remove from ice cube trays and store in plastic freezer bags or plastic freezer containers. Label with date. I keep a small basket in my freezer (from a dollar store) for all my herb butters, pesto, frozen herbs.
