I have 3 flowers that have bloomed, and the blooms have lasted about 2 weeks, then the blooms fell off, now there is a long stem that is where the flower was, is that the flower spike?

Each of these stems is a flower spike, and attached to each was a lot of individual flowers. To a layperson’s eye, the whole thing is a "flower", but properly the whole thing is a collection of many small individual flowers, each of which will develop into a seed capsule.

On the end of this " spike" there is something that looks like the infinity symbol (a sideward 8): is that what you are referring to?

Yes, this is the seed capsule. There should be one for each individual flower on the flower spike.
