I’m from Quebec, Montreal region, and i’m asking myself if it would be a good idea to plant new hops at this time (end of augus). Will they have the time to make good roots before winter? Is it a better idea to wait until next spring?

If you have ideal conditions for the hops, then go right ahead and plant them now. But if the soil is not quite moist, rich yet well drained, then better wait for spring. If you plant this fall, make sure you mulch your plant well after freeze up, not because the hops are not hardy in your zone 4 to 5 climatic zone, (they are hardy to zone 3) but to prevent frost heaving.
