Preserving Tomatillos Answered by: Robert Rathgate Question from: Tanya Ellacott Posted on: September 29, 1999
I’m hoping you can guide me. I purchased tomatillo seeds from you this year. The produce is absolutely wonderful! But of course I have too many to consume even after sharing with friends! Can I poach them (obviously after they have been husked and rinsed), puree them and store them in the freezer?
Tomatillos are usually used fresh after husking and washing and normally are pureed or finely chopped to make a salsa. I would cook them after pureeing if they were going to be frozen a little and indeed they would lose some of their flavour.
