Can parsley and oregano be cooked and eaten as you would greens?
Parsley is never cooked; it is usually added fresh to a dish at the very end of cooking, perhaps for the last few minutes at most, or after the dish is removed from the heat. Oregano is used dried in either cooked or uncooked dishes. Both are likely to be too strong tasting to be eaten like greens such as lettuce or spinach or cabbage. Having stated that, parsley is used in the Middle Eastern dish, tabouleh, which incorporates a high percentage of fresh chopped leaves in it, along with fresh mint and couscous. Still, even in tabouleh, parsley makes up less than 20% of the total weight of the dish.
The root parsley is, however, a vegetable and is eaten cooked like carrots or parsnip.
