I’m looking for some information about the nutritional make up of oat straw and parsley. What I am trying to determine is how much of their nutritional value is lost when they are brewed to be consumed in an herbal tea.

Even though not considered of nutritional value, most enzymes are destroyed by heating and therefore they won’t survive tea making. Some but not all vitamin C will also be denatured. The soaking and heating will inevitably destroy some nutrients, but since herbalists have been using them this way for hundreds of years, what counts must still be there. We do not consume these two products to be fed but for some medicinal, or taste enhancing purpose.
