I read a list of herbs one time and the foods to cook them. At the time it didn’t mean much to me but my husband and I are retirement age and both are overweight and I am trying to cook vegetables with herbs instead of fat meat. If you have such a list or any suggestions please let me know.
The unique flavours of fresh herbs can added a lot of taste satisfaction to vegetables. One of my favourite ways is to add them to soups, such as Zucchini Soup with basil or Tomato Soup with dill. Herb butters can also enhance the taste of vegetables.
In my cookbook, "Thyme in the Kitchen" (c. 2002 Prentice Hall) I provide an extensive list of vegetables and the herbs that go with them. Here is an excerpt from that list for some popular vegetables.
Aparagus - basil, chives, lemon balm, marjoram, parsley, sage, savory, tarragon, thyme
Beans, Green and Yellow - basil, chives, cilantro, dill, marjoram, mint, oregano, parsley, rosemary, sage, savory, tarragon, thyme
