What do you use lemon thyme for? I grew it and now what do I put it in?

Lemon thyme is great in vegetable (such as mushroom), chicken and fish dishes, for marinating olives and in olive tapenade. (See Thyme in the Kitchen for recipes.) It can be used in most dishes in place of regular thyme and its flavour is a little milder. It is a great addition to herb vinegars which can be used for marinades. I also use it in my Lemon Thyme Sugar Cookies.

My book, "Thyme in the Kitchen - Cooking with Fresh Herbs" (c. 2002 Prentice Hall), is available from Richters; for preview of recipes, visit www.yvonnetremblay.com.
