Can sage be substituted with another herb?

It depends what you are making. Each herb has a distinctive flavour. If you do not like sage you could try substituting with thyme and savory. Is the recipe using fresh or dried sage. If you have never tried sage fresh, you might be surprise how delicious it is! In my recipe for Veal Saltimbocca, you wrap a piece of prosciutto, thin slices of fresh Parmesan cheese and fresh sage leave inside a thin slice of veal. It is then browned on all sides in olive oil and remove fro the pan. Pan is then deglazed with Marsala wine and lemon juice, cooked until syrupy then spooned over veal rolls.
