What is arugula used as a herb for? For example lavender - relax, calm.
Arugula, also called rugula, rocket or roquette, is more of a salad green than a culinary herb. It has a slightly bitter, pepper mustard (bit like radish) taste and deep green, oak shaped leaves. Add it to salads, stir-frys, pesto, potato salads. It is often found in meslun salad mix. More mature leaves can be cooked with other greens such as mustard, Swiss chard, kale, etc. Also tasty in a sandwich with grilled turkey or chicken breast, goat cheese, roasted peppers on focaccia bread. It is very perishable; wrap well in plastic, refrigerate up to 2 days. Often a lot of sand on the leaves so rinse well. It is rich in Vitamins A and C as well as folate.
