A crab chowder recipe calls for bouquet garni. My local grocery store does not have that. I understand it is a mixture of several herbs -- can you tell me which ones? The recipe only calls for 1/2 teaspoon -- so I am not fretting too badly over not finding it. But would like to know what the herb combination is.
Bouquet garni (French) is a small bundle of fresh herbs consisting of one bay leaf, a sprig of thyme and several sprigs of parsley tied with kitchen string then added to soups and stews to flavour the broth. Once the mixture is cooked it is removed. (The string has one long end that can be draped over the side of the pot for easy removal!) You can sometimes find dried bouquet garni bundles in gourmet food stores. You can make up your own fresh bundles, dry them (store in a jar) for use later.
