I was born in Indonesia. I have a question for you, if you know anything about zedoary, lesser galangal or kencur root? Awaiting for your reply and thank you for your an assistance.
I do not know about this spice or how to use it, but was interested to learn about it, so thank you for your question. I read that it is a root/rhizome and with a smell similar to mango and turmeric. It is sold as a powder in Indonesia (called kentjur in Chinese stores) or dried slices. Two types are sold in Indian markets: curcuma zedoria and curcuma zerumbet. It is used to flavour curries such as seafood, lamb and chicken. This link describes the flavour as "warm and ginger-like, slightly camphorous with a bitter aftertaste".
