How do you make mint extracts to flavour baked goods and icings?
I have never made mint extracts. You probably have to buy commercially made ones that extract the volatile oils so they are concentrated enough for what you have in mind. You might try making mint syrup (link below). It won’t be suitable for baking and icings but is a great way to preserve mint flavour for use in drinks such as lemonade, iced tea and mojitos. You can also trying infusing mint into hot liquids (cream) to make desserts or ice cream or in warm chocolate for ganache, fondue or hot chocolate beverages. Infuse leaves in hot liquid for about 20 minutes then remove before serving.
