Could you please tell me about the nutritional value of Italian parsley vs. cilantro?
My expertise is in the area of -- cooking -- with fresh herbs so I cannot be too specific. Herbs are often used in very small amounts in cooking, so for the most benefit, chose recipes that use them in larger quantities such as Tabbouleh Salad (parsley), or use them every day.
All herbs have the nutrition of dark leafy greens such as folic acid, B Vitamins, Vitamins A & C, potassium and iron and other minerals such as zinc and copper, as well as lutein. Parsley contains health-promoting phytochemicals such as polyacetylenes, flavonoids, coumarins and monoterpenes. Cilantro has many of the same nutrients but in different amounts.
