Trimming Back Rosemary

I live in the deep south and my Rosemary plants (3 plants) have flourished. They are so large they are taking up an inordinate amount of space in my herb garden. Can you tell me how much I can trim these back and when would be the best time?
In spring just before growth begins would be the best time to trim your rosemary. At that time of year it will quickly initiate new buds and won’t look bare for long. At any other time of year you can easily trim off a little bit, but hard cutting back will not be well tolerated. Dry any excess trimmings, strip off the needle-like leaves and store for later use in cooking.
